How to stop honey glaze from caramelizing?


Tonight I made a honey glaze by storing honey and butter together in a sauce pan over medium heat. The flavor and aroma were great, but it very quickly hardened once I removed the heat and put it on my chicken. I probably should’ve followed a recipe or something, but I just kinda wanted to experiment.I’m an amateur when it comes to the culinary world. Most of the knowledge I have is stuff I figured out myself when I was a cook at a local brew pub for a year or so. I was hoping some of you might be able to help me figure out what to do next time.
