Looking for alternatives for baking


I have a bit of a sweet tooth and as satisfying as sugar free jello is it's starting to get repetitive. I want to start baking things but my concern is staying under my net carbs. For example what are some good sugar substitutes? I have heard stevia is a good one. Is this true? Why/why not? I am looking for what you guys use in the kitchen to substitute ingredients.
