
You need Mission tortillas (or any other vegan tortilla) Black bean salsa Arugula tomato any color bell pepper (orange is my favorite) red onion cilantroCut the tomato, onion, and pepper into small pieces. Line the tortilla with the salsa. Put in arugula, followed by the diced tomato, peppers, and onion. Finally, put in tiny amounts of cilantro. Fold and cook in a pan. I cook them for 3 minutes on each side at medium heat. Cook until they’re just a little golden brown on each side. After that, enjoy! its awesome as either a dinner or a small snack.
