I'm looking for a challenging cookbook with complex recipes, any suggestions?

I'm a competent home cook, I'd say I'm pretty confident cooking from something like The Food Lab and when doing simpler meals I can go without a recipe, but I really want to challenge myself to get better. I want to try to cook things beyond my skill level and I was looking for a cookbook that offers challenging and complex recipes. Any suggestions?
