New guy here. First time smoking went ok but I have a few questions!


Hi there,I hope this is allowed here. I just subscribed to this subreddit and I’ve been doing some exploring. My wife bought me an electric smoker for Christmas and I just tried it out last Saturday.I decided to try pulled pork because I’ve read it’s a good one to start with and relatively difficult to mess up. I found this recipe on the wiki here and decided to give it a try!I was a bit confused because the recipe states approximately 1.5 hours per lb of pork. I used 2, 3lb pork butts. I was expecting a 4.5 -6 hour cook time. My electric smoker has a built-in temperature probe so I can see the internal temp of the meat without opening the smoker. I left the butts in the smoker for about 11 hours and they only hit 175F. The recipe called for 195F. I added chips about every half hour to an hour. I decided to call it after 11 hours, finished in the oven the next morning, I pulled the pork and ate. It was good, a bit dry but I was happy with how it turned out for my first time.My question is, what happened with my temp? I opened the smoker door once and added a pan of macaroni and cheese but that’s it. I expected the “stall” but was my expectation of 4.5-6 hours that far off?I’m going to try again Saturday.
