Looking to imitate a penzeys spice mix, but i need help

I was looking to imitate this blend of spices.According to the site, it has salt, freeze-dried shallots, chives, garlic, onion and green peppercorns.I don't have anything fancy aside from an oven, maybe, to dehydrate these ingredients, and I was wondering how I'd go about making an imitation seasoning here.
