Who can recreate a recipe or taste?


What would that person be called? A food scientist? Someone who can taste a dish and then figure out how it's made. Or figure out the composition scientifically.Maybe that's two different professions? One more scientific, where they analyze the dish and figure out the components. The other where they can rate it and have such a good palate that they can figure out the ingredients.I have a discontinued sauce that I am desperately trying to figure out how to recreate (seriously, so desperate I made a blog about it) and I want to look into getting someone to recreate it.Who do I call?
