What's the correct method of making Kosha Maangso?


Whenever I show the online recipes to any Bengali guy they say it's wrong. I believe there are some guys here who know the real deal.Also, I always have to marinate the goat using raw papaya paste for a whole 8 hours. Cannot avoid this because the goat comes from a farm where the owner insists raw papaya paste for 8 hours minimum is a must.So if in the actual recipe it calls for marination with spices etc, do I have to wash off the raw papaya paste from the mutton pieces?Curious. via /r/IndianFood http://ift.tt/2FQxbA9
