Saw a weird thing today - cooked flour/water added to dough.


Over in /r/cooking, someone posted a burger bun recipe that uses a cooked flour/water custard/bechamel/wtf as part of the liquid ingredients.This is completely new to me - what's the deal with that? Is just it a sneaky way to get high hydration with an easy-to-handle dough, or is there something more cleverer going on?Is there even a name for this? via /r/breaddit https://ift.tt/2KmgsuB
