First time making rolls, and something feels off?


As of the recent flood of Thanksgiving culinary panic has struck my household, I've been given the task of bringing rolls for our dinner. I decided tonight to do a practice run of my own to gauge if I should just go buy some at the store, but I really want to bring some homemade rolls. I followed this recipe: (https://youtu.be/jFsjf7LevEU) and things came out pretty okay! I first tried an old recipe from my grandmother but everything turned bad really quick so I resorted to an easier recipe. After making them, they just seem a bit... off? I'm not sure if it's missing an ingredient or maybe it was my lack of technique and skill, but I was hoping someone could have an answer for me!
