
I am a college student. Lived in Houston for about 18 years (not currently). I moved a couple hours away for school this summer, but in the 6 months I've been away, I can't say I've done much cooking (occasionally I make eggs, pasta, fish). So what I'm trying to do before school starts back up is find at least 3 new meals that I can confidently cook on a regular basis.Now, obviously the reason I'm posting here in /r/Houston is because I'm assuming the kind of enchiladas we're used to is pretty unique. I could be wrong. Regardless, living in Houston most of my life I'm used to getting a steaming hot plate of enchiladas that is completely covered in refried beans and rice, almost appearing as if it is a single entity, and not 3 different food items.So if anyone has a recipe like that, let me know.
