What cheese to use with nachos? And any other toppings

I saw the post from u/waitwhatwasisayin and it got me thinking about my last nacho endeavor.I was very excited about them. I put:Ground chicken Refried beans Mozzarella cheeseAnd then dipped many in sour cream.They looked beautiful!!! I couldn't wait to dig in.Then I go to take a bite. And the flavor? Meh. I think it has a lot to do with the cheese I chose. And maybe also the beans that came from a can that I added nothing but milk to. I've had nachos with white cheese and they were delish.
