Old cook here but new to indian cooking

I cook foods from all over the world ( chinese, Japanese, French, German, a few african recipes, Mexican) but I have gotten bored. So I am trying to find my enthusiam for cooking every night. Would you please share a few of your favorite easy, starter recipes? I am not vegetarian and I do have many, many spices and willing to get new ones.
