Help me fix my coconut spread


2 days ago I decided to make coconut spread using coconut flakes and erithritol.I used 200g of coconut which I had toasted and 100g of erithritol and processed it for about 20minutes until I got consistency like peanut butter.I took it out from the pantry and it’s rock solid.
