I'm a newbie to homemade jerky, currently on batch 5 and having success. I have been sticking to lean meat and slight variations to online recipes. However, I LOVE Candy Cow jerky https://ift.tt/2ZptSIP. Everything I see says stay away from fat because it can spoil the meat, but this jerky is pretty fatty and extremely crispy so it is quite different from traditional jerky. Does anyone have insight on how this is made? via /r/jerky https://ift.tt/2HpBVze
