What are your favorite non-Asian-inspired tofu dishes?

Hi everyone,Recently, I have been using a lot of tofu in my cooking. However, I feel like I am always using it in Asian-inspired dishes such as pho, noodles, fried rice, curries, soups, and stir fries. There are so many different Asian cuisines that utilize tofu that I feel like it fits into a huge variety of Asian foods.
