As a very culinary challenged person/newb, how can I fix more plant based centric meals?


Preferably through cooking in large batches. I have experience roasting vegetables in the oven on a pan but I'd like to cook more at once. It'd be good if I could incorporate more beans and lentils somehow and brown rice without making them bland. I also struggle with how to eat lots of greens apart from having a salad. I don't have much experience cooking as I've just started living on my own.
