
The Royal PeacockI chose this for Oregon because of the bird name/mascot and because peacocks seem like a good fit for a university that built it's brand with flashy uniforms.Ingredients:1.50 oz Agricole Rhum (Clement Blanc is a good choice)0.50 oz Mezcal (Vida is a good choice)0.75 oz Mango0.50 oz Lime juice (hand juice if possible)0.50 oz Passion fruit syrupor liqueur0.25 oz Simple syrup1 Dash habanero/jalapeno/spicy bitters (Scrappy's Bitters is a great company)Notes:If making it for one or two people highly recommend cutting and hand juicing citrus on the spot. If you're going to be making a lot of these then store bought juice will be fine.Simple syrup is 1:1 fine granulated white sugar and water. When making it at the bar we'll do liters at a time, when making at home, I'll do 100g of water and 100g of sugar and store in a mason jar in the refrigerator for about a week.Preparation:Add all ingredients and shake into ice then strain over ice into a collins glass or double old fashioned glass.Taste:This has a mellow fruity flavor on the nose, as mango is pretty mild in its sweetness and Agricole is Martinique Rhum that is not sweet at all, if anything is more earthy/grassy similar to Cachaça. Then then you feel the smokiness of the Mezcal which balances with the mango.
